Using AccountRight Plus SP3.
I go to an existing employee card.
I type anything anywhere
I click OK to save
I get "Error You may not change this information while this employee is being used in Pay Employees"
How can I maintain employee attributes?

You cannot do them whilst a payroll process is in progress.
Just click the 'Close' button in the 'Process Payroll' screen and you will be asked "Do you want to save this pay run to process later?", just click the 'Yes' button and it will be saved.
Now you can go and change your employee attributes; once you are finished click the 'Process Payroll' from the Payroll command module. You will see a screen similar to the attached, just click the 'Continue' button.

The issue with being unable to make changes to an employee card, is a known issue with some client files.
In order to overcome this, the first thing to ensure would be to CLEAR any existing saved payruns in process payroll. You can do this going to the Payroll Command Centre >> Process Payroll and clicking on NEW PAYRUN, when a window with the option comes up.
If there is no saved payrun and the issue still occurs. Try saving a new payrun for the employee with the issue. This can be done, by starting a new Payroll Process, and then exiting it, and choosing to save, when prompted.
Once done, go back into process payroll and cancel this newly saved payroll transaction, by choosing the NEW PAYRUN option, as described above.
If you are still unable to make changes to the card, please send me a message, as you may need to send the file in for one of our Specialists to look at.
