I have many Customers now who wish invoices and statements go to different email addresses. I know you can manually select a different email address, but due to the large number of customers requesting this now, managing this manually is getting hard. Can this not be an automatic feature whereby you can have at least two different email addresses - one for invoices, one for statements??

I can see how a feature with email defaults separated for invoices and statements can provide much flexibility when setting up your defaults. Rest assured, this has been logged for future update consideration.
