Sorry to hear of the troubles you were experiencing trying to customize forms in MYOB Business/Essentials. In terms of customising forms in MYOB Essentials/Business, this is done via the Invoice and quote settings from within the Business Name menu in to the top right. From within here you can select the business details fields, theme and logo options that you wish to have for your customise forms. For more information into the current customisation with MYOB Essentials please see Help Article: Invoice and quote settings
If you would like to see more customising of those values for your invoices and other documents you might like top show your support for MYOB Live customised forms and templates on the MYOB Essentials Idea Exchange. You can show your support for an idea on the MYOB Essentials Idea Exchange by selecting the + VOTE button to the left of the idea's name.
