It's a bit odd to have a default date pop up when creating report packs since you can pick the period yourself. I'd say start by clearing your browser cache – it usually does the trick for weird stuff like this. After that, create a fresh report pack with the period and date range you want and save it. If the date is still not right, one reason could be due to a custom report used in the report pack. This can be fixed by resaving the custom report with the desired dates.
