When I try to extract/import the report for employment details (and many others), the output options for CSV are not available, only PDF. It's quite messy to convert manually from PDF to Excel.
Is there any way to get the CSV version directly from MYOB?

Currently, MYOB does not offer a direct option to export employment details (and some other reports) to CSV. If you only see PDF as an export option, you will need to convert the data manually. I understand this can be frustrating. As a workaround, you might consider using a PDF-to-Excel converter to make the process easier.
