Jobs Feature

Hi

we are about to start a big project that has been quoted item by item and I need to track the number of items we use per day to ensure the numbers match the quote at then end of the proejct.   EG: On monday we sold 5 of Item 1234 on invoice 1234.  On Tuesday we sold 4 of item 1234 on invoice 1235.   So ill need a running total for the project.  Does the jobs feature allow this and how do I get in to check it vs the quote at the end of the project?  How do I set it up?  .  I am hoping to not have to run a separate spreadsheet for this project just to track the stock sales invoice buy invoice.  Help please  thank you.
