If you have uploaded documents to the In tray then click on Create spend money transaction, the Spend money transaction will prefill the date from the document.
If you open a new function, eg go to Banking>>Spend money, the date will default to the current date. If you enter a transaction then select Record and create new, the new transaction will retain the previously recorded date as you're not re-opening that function.
