We usually pay weekly, but our business usually breaks at Christmas for 2 weeks. How will it work in regards to pay day super when you process a pay run earlier than normal but the employees are still paid on their usual pay day.

You can process the pay run early, as long as the Pay on date is the day your employees are actually paid.
For example, if you process it on Wednesday but pay employees on Friday, the 7-business-day super timeframe starts from Friday.
After recording the pay run, go to Payroll > Super payments and submit the super payment as soon as possible.
