I have updated the Custom List & Field Names, but even though the names update in the item information.... they do not update in the Column names in the item list when I add them in. I have tried restarting MYOB several times over several days and it still doesn't update it.
is there any other way to rename this Header for Lists & Fields so that when employees search the header tells them what they are looking at.

Thanks for those screenshots. The Item List can hang onto the old “Custom List/Field” labels even after you rename them. Quick fixes to try is go to Items List > Select Columns, remove and re-add the custom fields, then close/reopen AccountRight (or sign out/in). Check this article in costume item field for the guide.
