It is doable so long as you don't try to create a negative quantity on the interim item - i.e. MYOB AR did not bring forward from Permier/Enterprise V19 the ability to go into negative quantities - a big pain in the backend - but unfortunately it is a bigger problem when using the API - crashing a POST if there isn't enought in stock.
However, for your solution to work just create and interim inventory item that starts from a positive amount each month eg. 1000 or 10000 and then your solution should work I believe.
