You can definitely change the columns that appear on your quotes, sales orders and invoices. If you'd prefer to remove the Unit Price ad Discount % columns and just show the Discounted Unit Price instead, you can do that by adjusting your form layout. You can show or hide columns by following the steps in this guide: Fields and columns you can add to forms.
