Hey ToH_Andy,
That’s a brilliant idea with the Google review link, and we can see how handy it’d be for your business. There's no option to change the standard text of the HTML. The good news is you can switch your emails over to plain text instead, which means any links you pop in there should show up and be clickable for your customers.
