For many years we were using Business Basics. After all those years we are now down sizing and have now subscribed to Lite but I need some help getting started as it is ahugh difference to our previous program.

Since the program looks and feels different and you are correct it is a huge adjustment from Business Basics. The team has compiled training and tutorials regarding how to use the application. You can find online learning courses at MYOB Academy. Try this Help Article out too to understand how the dashboard and business details work too.

Eventually got to look at this. I have a question. We are not now registered for GST is it possible for us to simply start fresh with our account or do I need to continue with the old one?

You could either migrate your file from Business Basics to Lite or create one on Lite from scratch. But this decision will be before you create your subscription as there is no way to change the file to a blank file after a file from Business Basics has been migrated.
