Thank you for your post. To remove an employee from being in the Salesperson dropdown list, you would need to mark their card as inactive.
If you only put in an end date but didn't tick inactive that would be why you are still seeing the name. Can you go to the employee card and check if Inactive Card is ticked under Profile and if not select it?
If it is already inactive, can you respond with screenshots of the sale and the card (redacting any employee details), so I can reproduce it on my end.
