Thanks for the post, I saw you made a similar one over on our MYOB Business Ideas Exchange which I've just left a response on as well!
There are default messages you can set up in your MYOB Business file, this can be done from your Sales settings. However, you also have the option to set up email variables which will automatically pull in other types of information such as your customers name, invoice number and more. I'd recommend reading over this page for more information and instructions on how to set it up.
