If you are asking about when it is being banked to be paid later then that is an entitlement and you would create a category for that in entitlements with it being manually recorded when earnt and doing the payslip and have it as a user entered amount.
The linked wages category to reduce those hours will be paid TOIL.
You would then create a Paid TOIL wages category and assign that to the employee also.
Then you can keep track of what they are still owed and have been paid.
