While you can't customise the pay slip template (apart from adding a business logo), the Annual Salary field will only display for hourly-based employees if their Employment basis is full time or part time. To check this, go to the Payroll menu > Employees > click the employee > Payroll details tab > Employment details tab > Employment basis.

This means if the Employment basis for an hourly-based employee is set to Casual, the Annual Salary field won't show on their pay slip.
