how do we report STP correctly when pur options for certain payroll items dont have the stp categories? for example with child support deductions the stp reporting is - deduction type D M...

Generally, when assigning ATO reporting categories, we cannot give any advice on what category to choose. You may refer to the Help Article: Assign ATO reporting categories for Single Touch Payroll for more information on how to stay aligned with the ATO requirements and make sure that every payroll category is properly assigned to ATO reporting categories.
