I get why the “view your unpaid invoices” link isn’t something you want your clients seeing, especially if you’re still reconciling or have draft invoices sitting. There isn’t a separate setting to turn off just that link on emailed invoices, and the Unpaid invoice summaries setting you’ve found only controls the summary reminders, not the link on individual invoices. This link is part of a newer update to how online invoices work, and is something we’re unable to switch off.
