Thanks for posting your concern in the forum.
I understand that the numbering system of both sales and purchases is important to a business. Unfortunately, the web version does not function the same way as the desktop version. The desktop version has preferences on how the numbering systems work. On the other hand, the web version only has one string of numbers for all the sales transactions and cannot retain the number used from the quotes after converting it to an invoice. Rest assured, the development team is currently working on finding a better numbering system for both sales and purchases for the web version.
