This morning I made a payment into undeposited funds, The payment for this invoice came through on bank feeds, but I noticed due to transactions fees that the bank payment was less than what I originally put in undeposited funds. I can usually undo the payment but for some reason it's not letting me edit anything. Any help would be appreciated.

Got your message about redoing the payment record. From the screenshot, it looks like the payment you're trying to delete and redo is a "transfer from deposit" transaction, which can't be undone. Check out this thread for more info on similar issues.
