would love to know how to opt out of the myob payments platform.

Hey frank3​ , no secrets here
The process to turn payments off/on can be found here

If you have recurring invoice templates these will need to be adjusted individually
The other exception is that any open invoices you have at the time you upgrade will automatically have payments enabled.
