Copy of sent emails
Where can I set our own accounts address so that we get a copy of all invoices sent by email.

Neither of those options are available in the desktop version.
You can add your email address into the "to" field, but that is a kludge and confuses customers.
Also I has to be done manually on every email sent and also doesn't work on batch sends, like statements or remittances.
There should be a preference setting to add a cc address to every outgoing email without manual intervention.
