After switching off online payments as an option, it will only apply to invoices created going forwards from that change being applied in the file. If you're switching it off on an existing invoice, you need to resend it in order for the changes to take place.
In terms of the default settings for online payments, even after switching the toggle off - online payments will still have a status of active even after you deselect allow online invoice payments. This is the overall status of your online payments service. More information can be found on this page.

No worries there, statements won’t be affected at all. You can still email statements using MYOB even if you don’t go through the new secure upgrade. It’s just invoices that’ll be affected if the business verification process isn’t completed.

I do not have any intention of using the MYOB payment gateway. My invoices are paid via bank transfer from my customers.
Will you be stopping me from emailing a customer an invoice from MYOB?
I do not use MYOB's mail server. I use my own mail server through Outlook. Please confirm if you are going to stop me using my own mail server?
All MYOB does is make Outlook send an email. Is that going to be stopped as well?
This sounds like more of a private information grab ready for you to get hacked and leak information you have no right to ask for in the first place.
