Thank you so much for your post and my apologies for the late response. If adjustments to this information are necessary, the only available option is to create a new item. You can find additional information on Units of measure in our help article. Unfortunately, for items with existing transactions, inventory tracking cannot be removed, nor can inventory tracking be initiated for items with transaction history. Our suggestion is to create a duplicate of the item in question and deselect the "I track stock for this item" option. Afterward, deactivate the original item and begin using the new one.
We understand the inconvenience of having to recreate all items manually. Regrettably, there isn't an automated solution available to address this. We appreciate your understanding and patience in this matter.
